Chicken ‘Lemper’

This utterly delicious dish is a favourite savoury snack in Indonesia. One bite of the fragrant coconut-flavoured sticky rice with a spicy chicken filling, dipped in bread crumbs and fried to perfection and you’re in food heaven!

Ingredients for the ‘Lemper’

  • 3 eggs
  • 1 ¼ cups coconut milk (thick)
  • 2 spoons butter, melted
  • 4 oz all-purpose wheat flour
  • Salt
  • (All the ingredients above to be put in a blender and sieved)

Ingredients for the filling

  • 15 pieces chicken frankfurter
  • 10 pieces chicken sausages
  • 4 eggs, beaten
  • 2 cups bread crumbs
  • Oil to fry
  • 2 packets Brahim’s Lemon sauce
  • 1 cup pineapple, diced small
  • Spring onions
  • Coriander
  • Green chili

Instructions for the ‘Lemper’

  1. Heat some oil in a non-stick flat pan.
  2. Prepare this ‘Lemper’ as if you are preparing a ‘Lempeng’ (thin pancake).
  3. Spoon the batter on the flat pan and make circular motions so the batter gets evened out.
  4. Flip the ‘Lempeng’ and let it cook for a few more seconds.
  5. Take it out of the pan and repeat the process until you have finished the batter.

Instructions for the dish

  1. Roll the ‘Lemper’ with the chicken sausage and frankfurter one by one.
  2. Dip it in egg and roll it in bread crumbs.
  3. Fry it until golden brown
  4. Heat up the lemon sauce and diced pineapples in water.
  5. Bring it to a boil and pour it on the ‘Lemper’ before it is served.
  6. Garnish it with spring onions, coriander and green chili.
