Spiced Lemon Shortbread

Sugar, spice and everything nice is what these treats are all about! Melt-in-your-mouth texture is combined with bursts of lemon and mixed spices to brighten up any occassion.
Spiced Lemon Shortbread

  • 200gm all-purpose flour
  • 220gm planta margarine
  • 100gm custard powder
  • 100gm castor sugar
  • 1tsp ginger powder
  • ½ tsp cinnamon powder
  • Zest from 2 lemons
  • 1 tsp lemon essence


  1. Mix and sift flour, custard powder, spices and zest together.
  2. Incorporate the margarine into the flour mixture.
  3. Add lemon essence.
  4. Form the dough.
  5. Divide dough into 4 equal parts.
  6. Wrap each part in a plastic tightly.
  7. Refrigerate dough for an hour or two.
  8. Remove one part of the dough at a time (to avoid dough getting too soft and difficult to handle).
  9. Roll dough lightly on a marble slab dusted with flour to about 1 ½ cm thickness.
  10. Use a cookie cutter and shape them.
  11. Bake them at 180°c for 12 minutes.
  12. Roll them in sugar if you desire.
