Portugese Stuffed Eggs (Ovos Recheados)

Stuffed eggs are a popular first course in Portugal. They can also make a snack or light lunch or supper if served with a salad and good bread.

  • 4 large eggs, hard boiled
  • 225g sardines, canned in tomato sauce
  • 1 tbsp. mayonnaise
  • 1 tsp. paprika
  • 1 tsp. lemon juice
  • Salt & pepper
  • 1 tbsp. chopped parsley


For Sardine Stuffing:

  1. Shell the eggs, then cut in half lengthwise.
  2. Scoop egg yolks into a bowl and mash with sardines.
  3. Work in enough mayonnaise to make a light paste.
  4. Add paprika, lemon juice, and seasoning to taste.

For Eggs:

  1. Stuff the sardine stuffing mixture between the halved egg whites.
  2. Sprinkle chopped parsley on top.
