Portugese Stuffed Eggs (Ovos Recheados)
Stuffed eggs are a popular first course in Portugal. They can also make a snack or light lunch or supper if served with a salad and good bread.

Ingredients
4 large eggs, hard boiled
225g sardines, canned in tomato sauce
1 tbsp. mayonnaise
1 tsp. paprika
1 tsp. lemon juice
Salt & pepper
1 tbsp. chopped parsley
Instructions
For Sardine Stuffing:
Shell the eggs, then cut in half lengthwise.
Scoop egg yolks into a bowl and mash with sardines.
Work in enough mayonnaise to make a light paste.
Add paprika, lemon juice, and seasoning to taste.
For Eggs:
Stuff the sardine stuffing mixture between the halved egg whites.
Sprinkle chopped parsley on top.
