Jamaican Beef Rice Pilaf

This is a hearty one-pot meal that is easy to make and is delicious. The rice is well infused with the flavour of beef and spices. A warm, comforting and hearty rice pilaf dish.

Ingredients

  • 3 pieces tomato, seeded and chopped
  • 8 pieces shallots
  • 3 pieces garlic, finely minced
  • 1 cm ginger, finely minced
  • 4 tbsp. butter
  • 2 pieces green chilli, finely minced
  • 2 tbsp. coriander leaves
  • 3 tbsp. curry powder
  • 1 cm  cinnamon stick
  • 3 pieces cloves
  • 3 tbsp. dark raisins
  • 1 cup coconut milk
  • 1 cup chicken stock
  • 2 cups basmati rice (washed & drained)
  • 300 grams fresh Australian, lean, high in iron, healthy & beautiful beef strips (sliced thinly)
  • Salt to flavour

Instructions

1. Heat the butter in a large heavy pot.
2. Sweat the minced shallots, garlic and ginger with cinnamon, cloves and curry powder until fragrant.
3. Add in the beef strips and raisins.
4. Add the minced chilli, coconut milk, stock, salt and bring it to a simmer.
5. Add in the rice and chopped tomatoes.
6. Stir in the coriander leaves and let the rice cook until all the liquid has evaporated.
7. Reduce the heat to the lowest and cover the rice pot.
8. Let it cook for another 7 minutes or so.
