The is Chef Wan’s favourite chocolate cake topped with a smooth chocolate ganache frosting. Incredibly chocolatey, it is the perfect dessert choice for chocolate lovers.

Ingredients
230g unsalted butter
300g castor sugar
3 eggs
2 tsp. vanilla essence
1/2 cup walnuts, finely chopped
1/2 cup cocoa powder, sifted, then mixed with 1 cup hot water, before being set aside aside to cool
For Flour Mixture to Sift Together:
235g cake flour or wheat flour
1 tsp. self raising powder
3/4 tsp. salt
For Chocolate Ganache:
150g bitter or bittersweet chocolate, finely sliced
3 tsp. heavy cream
3 tsp. unsalted butter
Instructions
Whisk together the butter and sugar until light and combine well.
Add in the vanilla essence and eggs.
Add in the cocoa and sifted flour mixture.
Add in the walnuts.
Bake in an 8-inch pan that has been lined with baking paper (and brushed with a bit of butter) for 35 minutes at 170°C.
Leave the cake overnight to cool and sprinkle with chocolate pieces the next day.
Instructions for Ganache
Mix the chocolate and the heavy cream in a pot on low heat.
Once the chocolate is melted, remove from heat and add in the butter. Mix well.
