Banana Blossom Salad

Banana blossoms have a slightly bitter flavour with crunchy inner bracts that take on the flavours of the dish, making them perfect in this Thai inspired banana blossom salad.

Ingredients

  • 2 banana blossoms
  • 80g chicken, sliced and boiled
  • 80g shrimp, sliced and boiled
  • 10g chilli paste
  • 20g lime juice
  • 20g fish sauce
  • 20g ground roasted peanuts
  • 20g deep fried sliced shallot
  • 10g blended dry shrimp
  • 5g sugar

Instructions

  1. Remove the outer sheaths, core, and stamen of the banana blossom to use as a plate.
  2. Finely slice the banana blossom (white hearts only).
  3. Immerse in water, then in lemon juice to prevent browning.
  4. Boil shrimp and chicken, slice into long strips.
  5. Mix a little of the chilli paste, fish sauce, sugar, lime or vinegar together and stir until dissolved.
  6. Grind cashew nuts and dried shrimp together.
  7. Mix all ingredients together.
  8. Serve and enjoy.
