Vegetable Fritata

Loaded with herbs and roasted vegetables, this healthy dish can be eaten for breakfast, brunch or dinner. Use up whatever vegetables you have in your fridge to whip up this delicious meal for the family or add lots of cheese and herbs to make a fancy dish for guests!

  • 3 medium sized potatoes, sliced thick and fried lightly
  • 1 ½ tbsp. olive oil
  • 1 onion, sliced and fried
  • 6 eggs
  • 1 tbsp. chopped parsley
  • 2 tomatoes, sliced
  • 1 zucchini, sliced
  • 2 stalks spring onion, sliced thinly
  • 2 tbsp. chopped red chilli


  1. Heat olive oil and arrange potato, tomato, and zuchinni in single layer while frying.
  2. Pour eggs over vegetables. Cover and leave to cook slowly under low heat.
  3. Once top is cooked, turn the skillet upside down to put the fritata on a plate
  4. Put fritata back into the skillet for one minute to brown the top.
  5. Serve warm.
