3 medium sized potatoes, sliced thick and fried lightly
1 ½ tbsp. olive oil
1 onion, sliced and fried
1 tbsp. chopped parsley
2 tomatoes, sliced
1 zucchini, sliced
2 stalks spring onion, sliced thinly
2 tbsp. chopped red chilli
Heat olive oil and arrange potato, tomato, and zuchinni in single layer while frying.
Pour eggs over vegetables. Cover and leave to cook slowly under low heat.
Once top is cooked, turn the skillet upside down to put the fritata on a plate
Put fritata back into the skillet for one minute to brown the top.
