Tekwan Palembang Soup

Tekwan is a fish ball soup popular in South Sumatra, Indonesia. The fish ball is served in a shrimp based broth together with rice vermicelli, mushrooms, sliced turnips, and sprinkled with fresh Chinese celery and fried shallots.

Main Ingredients

  • 300 gm mackeral fillet pounded till fine
  • 2 tbsp corn flour
  • A pinch of white pepper
  • A pinch of salt
  • 1 stalk spring onion finely sliced

Combine all the above and form into a small fish balls

Other Ingredients

  • 100gm shrimp
  • 4 clove garlic finely sliced
  • 100gm turnip sliced thinly (julienne)
  • ½ cup ear mushroom soaked in water
  • 50gm sohun
  • 50gm banana flowers
  • Chinese celery and fried onions for garnishing
  • Salt and white pepper
  • Oil for frying and water

Instructions

  1. Heat oil in wok
  2. Fry garlic and shrimp
  3. Add water and all vegetables
  4. Bring mixture to the boil
  5. Add fish balls
  6. Continue boiling for another 10 minutes
  7. Add salt and pepper
  8. Remove from heat
  9. Sprinkle Chinese celery and fried onions before serving
