This super delicious noodle dish is the perfect combination of sweet and savoury flavours. Slurping egg noodles wrapped in the thick gravy made with beef broth along with a mix of spices, aromatics and sweet potatoes makes every mouthful a delight.

Ingredients
10 pieces of shallots
6 cloves garlic (ground fine)
1 cm ginger
½ cup taucho
2 cm galangal (bruise)
1 kg sweet potato (boiled and mashed)
1 kg meat (cut small)
½ cup groundnut (fried and pounded)
5 tomatos
3 tbsp. Meat curry powder
Oil
Salt to taste
Sugar to taste
Ingredients for the Noodles
2 kg yellow noodles
200g bean sprouts
4 pieces Fried Taufoo (diced small)
3 green chili (sliced)
3 red chili (sliced)
a few stalks parsley
a few stalks spring onions
½ cup fried onions
3 boiled egg
6 lime (small ones)
Instruction
Heat the oil and stir-fry the shallots, garlic and ginger.
Add the curry powder, taucho and fry until fragrant.
Add the meat, mashed sweet potato, galangal and enough water.
Boil for 20 minutes.
Add the tomatoes, groundnuts, salt and sugar.
Serve it together with the noodle ingredients.
