Laab Gai is a Thai minced chicken salad that is found in Northeastern Thailand and Laos. It’s loaded with fresh herbs, spices, and lime juice and is perfect for a hot day.

Ingredients
2 cups (280gm) minced chicken, boneless
¼ cup (60ml) water
2 tbsp. lime juice
2 tbsp. roasted rice, pounded
½ tsp. ground chili
4 pcs. shallots, sliced thinly
2 stalks spring onion, sliced thinly
A few stalks of coriander leaves, chopped
2 tbsp. fish sauce (Nampla)
½ cup (15gm) fresh mint, chopped
Some long beans, cabbage & spring onions as a garnishing item
Instructions
Add water and minced chicken into a wide pot.
Add fish sauce. Bring to a simmer.
Once minced chicken is cooked, remove into a bowl.
Combine shallots, toasted rice, lime juice, ground chili, shallots, spring onion, coriander leaves, and mint with the cooked minced chicken.
Serve them with long bean, cabbage and spring onion on the side.
