King Mackerel Croquettes

This dish is a delightful combination of mackerel flesh, herbs, spices and potatoes dipped in breadcrumbs and fried golden brown. Serve these tasty croquettes with garden salad, french fries or even pasta for that added oomph!

Ingredients

For Filling:

  • 125g king mackerel flesh, steamed and finely mashed
  • 500g potatoes, boiled then finely mashed
  • 1 red onion, finely minced
  • 2 eggs, beaten
  • 3 pieces white bread
  • 2 ts salt
  • 1/2 ts blackpepper powder
  • 1 tsp. fish curry powder
  • 1 tsp. dried dill
  • 2 red chillies, finely minced

For Dredge:

  • A bit of wheat flour
  • A bit of bread crumbs
  • 1 egg, lightly beaten
  • Oil for frying

Instructions

  1. In a bowl, mix all the ingredients for the filling.
  2. Shape into ball shaped croquettes.
  3. Dredge filling into flour, dip in egg, and roll in bread crumbs.
  4. Fry in oil until golden brown.
