Ingredients
60ml unsweetened chocolate, chopped finely
180ml semisweet chocolate, chopped finely
4 tbsp. margarine
1 cup walnut
½ cup sifted all-purpose flour, sifted together
¼ tsp. baking powder, sifted together
¼ tsp. salt
2 whole eggs
¾ cup sugar
1 tsp. vanilla
2 tsp. instant coffee diluted with 1 tsp. water
Instructions
Melt both chocolate and margarine over a Bain Marie and set aside
*If you don’t have a Bain Marie, you can simply use a small pot and heat ingredients over very low heat
Beat sugar, egg, vanilla and coffee until light and fluffy.
Add melted chocolate and flour and mix it slowly into the mixture.
Fold in chopped walnuts into the mixture
Prepare a pan, preferably a square pan, which has been greased and lined with aluminium foil
Pour the batter into the pan.
Decorate the top of the brownie with some whole walnuts if you desire.
Bake at 180°c for 35 minutes.
Take the baked cake out of the oven and insert a toothpick in the middle of the cake. The toothpick should come out fairly clean with a bit of chocolate clinging to it.
Chill the cake in the refrigerator for a few hours before cutting.
Serve the cake in a square tray or cut out rounds with a cookie cutter.
