Apricot and Raisin Cookies

Nothing brings families together like baking. These cookies make great gifts, and the heavenly smell they leave in the kitchen is certainly a perk.

Ingredients

  • 150g butter or margarine
  • 80g sugar
  • 1 egg
  • 1 tsp. vanilla essence
  • 150g self raising flour
  • 30ml milk
  • 2 cups of cornflakes, crushed
  • 120g raisins
  • ½ cup almond, chopped
  • Pinch of salt
  • 60g dried apricot, chopped

Instructions

  1. Beat butter and sugar until light and fluffy.
  2. Add egg and vanilla essence. Beat well.
  3. Fold in flour and milk one spoon at a time.
  4. Add remaining ingredients and mix well.
  5. Place mixture in teaspoon portions on lightly greased baking trays.
  6. Bake in preheated 175°C oven for 15-18 minutes or until lightly brown.
