Apple & Raisin Pancakes

Ingredients

  • 3 whole eggs, separate the yolk and the white
  • ¼ cup all-purpose flour
  • ¾ cup yoghurt
  • ¼ cup margarine, melted
  • 2 tbsp. castor sugar
  • ¼ tsp. salt
  • 1 tbsp. grated lemon zest
  • 2 green apples grated coarsely
  • 2 tbsp. margarine
  • 2 tbsp. sugar
  • ½ tsp. cinnamon powder

Instructions

  1. Beat the egg whites until stiff.
  2. Put egg the yolks in a bowl.
  3. Beat the egg yolks with hand beater.
  4. Add yoghurt, lemon zest, melted margarine, flour and sugar to the egg yolks.
  5. Fold egg whites into the batter.
  6. Heat margarine on a non-stick frying pan.
  7. Ladle some butter into the frying pan.
  8. Make small individual pancakes.
  9. Cook slowly for 1 ½ minutes.
  10. Turn the pancakes over to the other side./li>
  11. Cook them for about 30 seconds.
  12. Serve pancake warm with margarine and the apple compote.

Instructions for the apple compote

  1. Melt margarine.
  2. Fry apple with sugar over low heat until it caramelised.
  3. Add cinnamon and keep in container.
