Sugar, spice and everything nice is what these treats are all about! Melt-in-your-mouth texture is combined with bursts of lemon and mixed spices to brighten up any occassion.

Ingredients
200gm all-purpose flour
220gm planta margarine
100gm custard powder
100gm castor sugar
1tsp ginger powder
½ tsp cinnamon powder
Zest from 2 lemons
1 tsp lemon essence
Instruction
Mix and sift flour, custard powder, spices and zest together.
Incorporate the margarine into the flour mixture.
Add lemon essence.
Form the dough.
Divide dough into 4 equal parts.
Wrap each part in a plastic tightly.
Refrigerate dough for an hour or two.
Remove one part of the dough at a time (to avoid dough getting too soft and difficult to handle).
Roll dough lightly on a marble slab dusted with flour to about 1 ½ cm thickness.
Use a cookie cutter and shape them.
Bake them at 180°c for 12 minutes.
Roll them in sugar if you desire.
