Rica-Rica Grilled Fish

This spicy and delectable dish is an integral part of the cuisine of Manado, Indonesia. Grilled to perfection, the fish, smothered in the fiery Rica-Rica sauce rich in herbs and spices, will certainly leave a unique and unforgettable taste on your tongue!

Ingredients

  • 700g ikan tongkol (albacore tuna), medium size
  • 100g or 8 pieces of fresh red chillies
  • 100g or 8 pieces of shallots
  • Ginger, thumb size
  • 4 calamansi limes to marinate the fish
  • 4 calamansi limes to mix with bumbu (pounded ingredients)
  • Minyak jelantah (used cooking oil)
  • Salt to taste

Instructions

  1. Marinate the fish with lime water and salt for an hour (better if it is overnight), before grilling.
  2. Pound the red chillies, shallots, ginger before combining with calamansi lime juice and used cooking oil.
  3. Divide the pounded ingredients into two (2) parts – half to baste the fish while it is being cooked on the grill and another half to mix with the hot used cooking oil before pouring on the ready to be served fish.
  4. Grill the fish until cooked.
  5. Serve hot.
