Nestum® Crispy Prawn Mee Hoon Kerabu

INGREDIENTS

For Crispy Nestum® Prawn

1 cup Nestum® Original

600gm medium prawns (peeled)

2 eggs (beaten)

3 tablespoon wheat flour

1 teaspoon oyster sauce

1 teaspoon fish sauce

White pepper

Vegetable oil

For Kerabu

250gm mee hoon noodles (soak in hot water until soft and drain)

150gm chives (finely sliced)

A handful of mint leaves (finely chopped)

6 garlic cloves (finely chopped)

2 tomatoes (finely chopped)

½ cup ground peanuts

For Kerabu Paste

2 tablespoon of shrimp paste (sambal belacan)

3 tablespoon fish sauce

5 limes (juice to taste)

2 tablespoon grated palm sugar (gula melaka)

6 tablespoon dried shrimp (fried and finely ground)

METHOD

Crispy Prawns

  1. In a bowl, mix prawns, wheat flour, and the seasonings (oyster sauce, fish sauce, and pepper)
  2. Dip prawns in egg one by one and toss evenly in Nestum® Original
  3. In a medium heat oil, fry prawns until golden yellow

Kerabu Mee Hoon 

  1. In a large mixing bowl, add mee hoon, followed by the paste and all other ingredients
  2. Using the wooden spoons, toss the mixture until all ingredients are mixed well
  3. Add in the Crispy Nestum® Prawns and toss lightly until prawns are evenly distributed in the kerabu
